Food52.com did a taste test (among their staff) of 8 mayo's (or mayo like - they included Miracle Whip). Here are the results:

Somewhere on this forum I've cited the study that showed adult mayo likes are almost completely correlated to early life exposure/acculturation.

Yeah I can buy that. Pretty much everyone I know that likes Miracle Whip liked it as a kid. No one seems to come to like it later in life.

I wonder how many other food likes are like that? A lot I'd think.

Pale imitator? They meant to write tremendously improved imitator! :ogbiggrin:

My dad's homemade mayo. I don't eat enough mayo to even justify buying, much less making my own from his recipe but it includes oil, egg, dijon, and lemon juice. It's so delicious.

This week I learned how to make a reasonable amount of mayo with an immersion blender. The chicken salad I made with it is amazing. Maybe a tuna melt later this week. Good eats.

This will toss this thread way off course!

This is a go to dinner around our home in hot weather. Use this as a dip with whatever seems like a good idea. We use it with cubed fowl, pork, veggies, fruit, bread, fingers, or what ever else seems like a good idea at the time. Turkey and grapes is probably our most common. Try it, you'll like it!

1 part sour cream
1 part plain yogurt (we use Greek)
1 part mayonnaise (use Miracle Whip by your preference, who cares)
OPTIONAL: add additional seasonings to taste.

So simple, even a husband can do it!

That's an Olivier salad with dairy . I have been known to use Olivier salad 2x month for leftover management, esp. after holidays.


carrot*/pickle**/egg***/ham**** is the classic combo.

*3/4 poached, i.e. just slightly more al dente than in soup
**pressed and drained, don't need extra brine or vinegar ruining the texture or settling out
***if you hardboil them in black carrot water you can do blue eggs
****if you can get the tinned Danish ones with gobs of aspic

Since the pandemic made me permanently work from home, I do occasionally make mayo now. I learned a super simple way using an immersion blender and just plan meals (sandwiches etc) that will use it over the next couple of weeks. So much better than storebought on a BLT.

Oh totally. Especially since you can pick your own acid (me: lemon juice) and oil (me: sunflower).

And, yes, I'm still doing it using plant-'egg' mixes like Just Egg.
