Same experience. I went with a "compact" 5'2" Butte model. No regrets.

I am the exact same stats as your wife and I am also an intermediate skier once I get off piste. I don't get much opportunity to practice that. I demoed some Stockli Stormrider 85ws at Taos and I like them so much that I bought a pair as soon as I got home. They worked great in bumps, on groomers, and in about 6 inches of soft snow. I usually ski a length between 157 and 163. I liked the 161s but feel pretty sure that I would also have liked the 154. It is the most versatile ski I have ever skied and it's smooth like a BMW!I'd definitely be looking for something that can ski well on the groomers, but work well off piste as well. I'm really wanting to get in North Bowl for instance. If the wife doesn't dig it, but can take the North Bowl road while the kids and I ski the bowl.

Yes. It was love at first turn! Luckily ski essentials has their Demos on sale right now . They described mine as 8-9 but I can’t see a flaw. They were a scream in’ deak!But then I'll need to buy her a pair and they're way more expensive!

Just focus on how happy she will be when she buys a pair. More important - think about the benefit (side effect?) from all that happiness (from you end).

Hah! Like skiing with 6 year olds who are really good. They can hockey stop in a goat path and go right under low branches. No chance keeping up.
Re: Red Lodge, the on-mountain shop doesn't have a ton of inventory, but I believe they do carry some good stuff in the demo fleet. It's probably worth calling ahead (and yes, I'd call, not email) and seeing what the options are. The folks who were working there when I was in town were all helpful folks, and I don't think that's changed. If Palisades is open, there are some widely spaced, lower-angle trees down there that might be just the thing; Cole Creek has a lot of very cool, ungroomed terrain as well, but I don't know that your wife would find it all that friendly (the easiest way out should still be plenty doable, though, and it's worth going up there at least once for the views).
