If having pie à la mode, it has to be French vanilla.
There's a local western PA diner chain (Kings) that has a line of ice cream, including cinnamon ice cream - which is primarily intended to be put on top of apple pie.

Otherwise, yeah french vanilla is good.

Vanilla pre softened in the fridge for about 40 min. One neat scoop on slightly warmed up apple pie.

Got a praline ice cream once for an apple pie I made. May have been a caramel praline. The combo was excellent.

Cinnamon ice cream is great on apple pie. Or alone. Probably wouldn't hurt pumpkin pie either.
