Would the $99 Freeflex 16 deal bindings from a couple months ago fit these plates? I'd guess so. Too lazy to research at the moment.

You mean the R16’s?
Not Freeflex, but they’re $79 now at Level 9.
Since these risers are not connected, maybe not the best, but a binding person would have to comment.

I don't need any bindings but I feel like I should order a couple pairs anyway.

Any chance these are still for sale?
I have a pair of these with Head branded ff16s that I might let go of. Race prep from Podium ($129+tax this year). Only skied a few runs (no gates).
They make such a beautiful, round turn with tenacious edge hold. I think my Rossi SLs suit me a little better though.
