Such being the case, what are about some of your favorite play lists?
Do the conditions dictate the playlist - or the terrain- or both?
Is there a way to share playlists in Apple Music?

I've put together several playlist just for skiing. It's usually based on my mood and terrain. I have lists in different genres including country, rock, pop, movie soundtracks, etc.
Playlist are easily shared in Apple Music. There is a share option that you can email or copy a link. I'm in the process of getting all of my playlist moved over to Apple Music so I can share them more easily.

Random playing of the 1000 or so songs on my phone works fine for me....every blue moon I'll hit fast forward on a particular song but not very often.
